Chicken and Spinach Alfredo

Easy Chicken & Spinach Alfredo!


The ingredients above serves: 1

To serve: 4

3 boneless chicken breasts, cooked and cut into chunks

2 cups frozen spinach

2 cups pasta

2 tablespoons olive oil

2 teaspoons minced garlic

2 tablespoons flour

1 cup chicken broth or 1 chicken bouillon and 1 cup water

1/4 cup plain yogurt

1/4 cup milk

salt and pepper to taste

1 pinch ground nutmeg


– Season chicken with salt and pepper.
-Heat the olive oil over medium-low heat in a skillet and cook the chicken until its no longer pink.
-Cook pasta in boiling salted water according to package and drain.
-In a saucepan, heat the olive oil over medium-low heat. Add garlic, stirring frequently, until the garlic is golden.
-Whisk in the flour until smooth.
-Whisk in the chicken broth, yogurt, milk, pepper and nutmeg. Bring to a low boil, stirring constantly. Lower the heat and simmer, stirring gently, until the mixture thickens.
-Add cooked chicken and spinach to sauce mixture, followed by the cooked pasta.
-Toss and serve hot.
